I’d never eaten Tofu before. The beauty of this is that as there is no meat it is super quick to make.

10 Oz/ 300g Soft tofu
2 White mushrooms (can substitute with preferred mushroom)
1 Shitake mushroom
2 slices of Jalapeno Chile
0.25 Tsp Minced garlic
1 Cup Water
1 Spring onion
0.25 Tsp Asian sesame oil
2 Tbsp Hot pepper paste
- Boil Water, onion, mushrooms, courgette, chilies, garlic, spring onion and sauce over a high heat for five minutes.
2. Add Tofu and continue to boil for five minutes.
3.Skim foam with a spoon and stir often.
4.Add spring onions and sesame oil and turn off the heat.
5.Can be served however desired (as a starter, side or main with rice).
